When we start a new speech task, we generally put all the data associated with it in a new subdirectory under /u/drspeech/data. The ideal layout of such a tree is described in David Johnson's drspeech.txt file from 1996. Again, you'll notice a certain gap between the theory in this document, and the practice as played out in /u/drspeech, but it's a start.
